An animal charity has released shocking footage of geese being force-fed at a French foie gras farm - in a bid to stop people buying the "cruel" food at Christmas. Animal Equality claim it filmed in secret while on a public tour of La Ferme Turnac in Domme near Toulouse in southern France in August. Footage shows farmers trapping the birds using a metal holder before shoving a long tube down their throats and pumping them full of food. In some clips the birds can be seen trying to pull away before they are trapped, and workers massaging their necks while forcing food into their stomachs.

Being a new and unique web site I understood some chefs reluctance to participate in my project but I also understood that were we to get a few big 'names' on board that the site would earn some credibility making it appealing to other chefs to contribute. When I received an email from Peggy Li at L'Atelier in London that chef Olivier Limousin was willing to contribute to the site I was absolutely elated. I can remember quite clearly walking into L'Atelier at our prearranged time and thinking to myself that it was like walking into a super cool temple or place of worship. Everything about L'Atelier was stylish and full of class, the attention to detail phenomenal. Of course I was nervous but once I was introduced to Olivier the nerves just disappeared. Here was a guy who was just cool, confidant, totally relaxed and incredibly talented. It’s a delicious, rich and earthy spread, perfect for a starter. This dish is simple and easy to make. Just cook off most of the ingredients, then combine them all in a food processor and blitz until almost smooth. Pop in the fridge for a few hours and you’ll be left with a smooth, hearty paté ready to eat. This is such an incredible spread to eat with the perfect sourdough bread. We hope you love this recipe! Recipe Ingredients 2 tbsp olive oil 1 shallot Pinch of salt 2 cloves garlic 18 button mushrooms 2 tsp rosemary 2 tsp thyme 2 tsp sage 2 tbsp cognac 400g cooked lentils 150g toasted walnuts 2 tbsp soy sauce 2 tbsp beetroot puree Method Heat 2 tbsp of olive oil in a frying pan. Roughly chop the shallot and add to the pan. Add a pinch of salt and cook the onions until they are translucent. Roughly chop the garlic cloves and add to the pan. Cook this off and add the chopped button mushrooms. Stir until everything is well cooked. Add the rosemary, thyme, sage and cognac. Add the contents of the frying pan to a food processor along with the lentils, walnuts and soy sauce. Pulse the mixture until combined then add in the beetroot puree. Process until almost smooth, add an extra splash of cognac if needed. Transfer the mixture to a jar, adding on a thin layer of dairy free butter on the top (optional). Refrigerate for a few hours before serving.
